Introducing Project Pickle, a collaboration between the Rick Stein’s team, Beach Guardian and St Petrocs.

Project Pickle is an exciting collaboration, which is a multi-stage project culminating in the creation of a chutney which will be sold to raise funds for St Petrocs.

The project aims to involve St Petrocs clients and the wider community throughout the entire process, to build confidence, mental well-being and develop skills which can improve personal development.

Our Director of Engagement, Lois Wild, shared:

We are so delighted to be working with two amazing organisations in Cornwall to collaborate on this project to support our work to end homelessness in Cornwall. 

We have been fortunate to work with both Rick Stein’s and Beach Guardian in meaningful and important work over the years, and this project will harness their good work and determination to support us in helping people out of homelessness for good.

We are so grateful for the support of all involved, and are really looking forward to welcoming and engaging with people along the journey toward this tasty chutney.”

The project has been shaped and crafted with care and attention from start to finish to ensure that each step of the journey engages people in the activities and process of the producing of a delicious Cornish chutney. The team will be made up of staff and volunteers from each organisation, as well as St Petrocs clients and anyone else who wishes to get involved in this exciting project.

Each stage of the process is designed to provide valuable community engagement, teamwork, work experience and awareness of homelessness each step of the way, from planting vegetables, to designing the label. The project culminates with all funds raised through the sales of the chutney,  going directly to supporting our work with people who are experiencing homelessness.

Project Pickle Updates
Stage One- planting

On Tuesday, 28th May, we met at Trevisker Community Meadow to sow the seeds of the cauliflowers which will be used in the final chutney! Andrew from Beach Guardian hosted us in a greenhouse where we planted 762 seeds between 14 of us (and Pan the kitten!) It will now take 6 weeks for the seeds to germinate before we can plant them in the ground!

     

Stage Two- planting and printing

On Friday, 12th July, we returned to Trevisker Community Meadow to prepare an area of the ground, so that we could sow the seedlings of our cauliflowers. We turned over the ground and managed to plant all the germinated seeds successfully. After a well-deserved pasty lunch, we began experimenting with cauliflower printing, which we hope will inspire the label for the final chutney.

       

Stage Three- pasty making and chutney tasting

On Wednesday, 11th September, we visited Rick Stein's Kitchen for a wonderful session of baking and eating pasties, along with tasting various chutneys, to inspire for Project Pickle's very own chutney recipe. We had an update on our growing cauliflowers and are ready to take on the challenge of creating a recipe of our own!

     

Stage Four- Chopping and chutney creating

In February 2025, we returned to the Rick Stein Kitchen for two days of chutney creation! With thanks to Riviera Produce's kind donation of vegetables, we were able to prepare, chop and dice over 100kg of cauliflowers, as well as green beans, shallots, courgette and cucumber. On the second day, we returned to prepare the jars full of chopped vegetables, prepare the liquid and cook the cauliflower and shallots! 

       

         

Stage Five- Labelling and selling

On Wednesday, 2nd July, we hosted a Pickle Party at Rick Stein Fistral, for a celebration of our final product, and to add the finishing touches of the label to the jars. It was a delight to see so many supportive Cornish businesses and supporters in attendance, who had the first opportunity to purchase a jar of St Petrocs Piccalilli. We were pleased to invite everyone involved in St Petrocs to join us, including residents who were involved in each step along the way.
